Supermoms

It is 1:19pm and I haven't even started lunch and Grant is behind in his school work again. The good news is that I have found a supermom with 8 kids who cooks gluten free and homeschools 6 of her kids and she is willing to share her recipes with me. Maybe there is hope.

Pancake Mix

8 c. whole wheat flour (we use rice flour)
2 1/2 powdered milk
1/4 c. baking powder
2 c. white flour (We use more rice because we can grind up rice in our grinder and it is much cheaper than the other gluten free flours, but you could try oat, potato, tapioca or any gluten free flour that you like.)
1/2 cup sugar

To use mix:
Stir 2 c. mix, 2 eggs, 1/4 c. oil, and enough water for the right consistency.

Pancakes are the one food that still turn out when you substitute flours in a recipe.

There are many other online stores, but I haven't written down the addresses. If you know of some, I'll include them in the list.
Wal-mart and Win-co are throwing in a few gluten free mixes here and there on their shelves, too. Win-co also has a variety of flours in bulk. Spelt is the natural form of wheat before more gluten was added. Our family can handle spelt flour in baking as long as we don't mix it with too much sugar. Spelt, rye, tapioca can all be found at Winco in the bulk section. Happy shopping.

apple pie


This was an experiment. I had some extra tamale dough, so I used it as a pie crust and added some apple pie filling, then added the strips at the top. It turned out pretty good.
