Pancake Mix

8 c. whole wheat flour (we use rice flour)
2 1/2 powdered milk
1/4 c. baking powder
2 c. white flour (We use more rice because we can grind up rice in our grinder and it is much cheaper than the other gluten free flours, but you could try oat, potato, tapioca or any gluten free flour that you like.)
1/2 cup sugar

To use mix:
Stir 2 c. mix, 2 eggs, 1/4 c. oil, and enough water for the right consistency.

Pancakes are the one food that still turn out when you substitute flours in a recipe.
